Shree Maa’s Fig-Mint Chutney is a tasty relish that can be used to accent a meal of rice, dal, yogurt and vegetables. This recipe is a fresh chutney (not cooked), so it is meant to be eaten as a condiment on the day prepared. This chutney can also be served with bread, crackers, and other pastries.
Makes 12 to 14 servings.
Ingredients
2 packages (14 ounces each) dried figs. Calimyrna figs are a type of chewy golden fig that works well. Dates may be substituted.
1 bunch fresh mint leaves
½-1 cup water or any fruit juice
Directions
1. Chop the figs.
2. Remove the stems from mint leaves and wash the leaves thoroughly.
3. Combine figs and mint leaves in blender. Process, adding water or fruit juice slowly until the chutney is smooth and is of the desired consistency.
