This simple, tasty sautéed mushroom recipe is one of Swamiji’s favorites and it takes less than ten minutes to prepare! Shree Maa serves this as a side dish, with other vegetable dishes and daal. Enjoy with warm chapati or roti.
Ingredients
1 ½ cup medium mushrooms, ½ inch slices
1 tbsp olive oil
½ tsp asafoetida
½ tsp salt (adjust to taste)
Directions
1. Heat medium sized frying pan over high heat.
2. Add olive oil, asafoetida and salt and fry for a couple of minutes.
3. Add mushrooms and fry on high heat, stir frequently until roasted and tender, about 5 minutes.
4. Enjoy hot as a side dish.
Note: For best results, use pre-cleaned mushrooms. If you use freshly washed mushrooms pat them dry with a paper towel prior to frying, otherwise the added water will not allow them to sauté well.
